They seem to be a bit thin on the ground these days but 36 Sig Regt are doing one on the 14th June in Cardiff. I dont know if it will be public access but here's a link.

You could try Paul Goodwin he may know if a diary of these events is kept at KH.

The day starts at 1200 with a 21 Gun Salute from 104RA, followed by a parade through Cardiff led by the Band of the Royal Welsh, on returning to the Castle there will be a Drum Head service.
There will be lots to do through out the day in and around the castle( displays, re enactment sociaties, bands, choirs and of course a beer tent and food).
There will be a fly past by an RAF Dakota at 1600 and the Beating Retreat will take place at 1900 in the Castle grounds.
There will be a similar event at Caernarvon Castle on the 05 July 2008
